The Moroccan summer puts creams and fillings to the test: high display-case temperatures, outdoor buffets (weddings, catering), transport without continuous cooling. A cream that deflates or a filling that runs at that moment means a lost order and a damaged reputation.

Stability depends on three things: the structure (what gives body), the stability of the emulsion (what prevents the release of water and fat) and resistance to temperature cycles. A homemade product adjusted by hand struggles to hold these three criteria from one service to the next.

For creams, the cold pastry cream brings constant foaming and a fast set, without the risk of over-cooking. For a summer buffet, we favour the references with high foaming stability and look after the cold chain upstream — the product works no miracles if the cream already leaves warm.

For fillings, a texturising system limits moisture migration and softening in heat. The Excellence fillings are formulated and tested to remain stable between leaving the bucket, piping, any baking and storage.

On organisation: prepare as close to service as possible, limit waiting times at room temperature, and for catering provide insulated containers. Product and process work together.
