Choosing your flour corrector supplier in Morocco: the criteria

Bespoke formulation, laboratory, on-site support, delivery consistency, landed cost: the framework for comparing a supplier of correctors and improvers.
Choosing a supplier of flour correctors and bread improvers is not decided on the per-kilo price. A poorly calibrated corrector costs more in breakage, customer claims and lost yield than it saves at purchase. Here are the criteria that really matter.
1. Bespoke formulation, not catalogue. Every mill works with different wheats, with its own delivery variability. A serious supplier starts from your analyses (W, P/L, Hagberg falling number) and formulates a stable rheological target — it does not sell a single product “that works everywhere”.
2. A real laboratory. Alveograph, falling number, and above all comparative trial baking. Without this last test, a quantified analysis stays theoretical. Ask to visit the laboratory and to see a typical trial report.
3. On-site support. The dosage is tuned on your line, with your teams, on your dosers. A supplier that delivers the bag and disappears leaves you to handle the fine-tuning alone — that is where the weeks are lost.
4. Consistency and lead times. A corrector out of stock means out-of-target flour delivered to the customer. Check the permanent stock, the real lead times (not the advertised ones) and the capacity to follow a rise in volume.
5. Traceability and compliance. ONSSA-approved establishment, HACCP approach, microbiological self-checks in an external laboratory, up-to-date documentation, technical and safety data sheets available. For export, the capacity to provide certificates of origin and health certificates.
6. Landed cost, not catalogue price. Compare at an equivalent dosage for the same result in trial baking, transport and lead time included. A well-formulated local product avoids import costs, inflated safety stocks and currency swings.
7. Technical proximity. Language, time zone, response time. A problem on a morning bake must find an answer the same morning, not 48 hours later.
